Awesome Raw Vegan Tacos

When you want to impress your tastebuds, make this! The blend of aromatic seasonings in the walnut taco meat, the addictive creamy texture and flavor of the nacho nut cheese and the freshness of the veggies all blend together to make a delicious burst of flavor that you won’t want to put down.

You can finally feel good about eating a hearty, filling taco dish. This gets rave reviews at parties too!

Here are all 3 recipes to put it all together.

Awesome Raw Vegan Tacos

Ingredients

Walnut Taco Meat (recipe below)
Nacho Nut Cheese (recipe below)
Whole Romaine Lettuce Leaves
Roma Tomato, sliced and halved
Green Onions, chopped
Avocado, sliced
Cilantro

Instructions

Take 1 romaine lettuce leaf, spread about 2 tbsp of the nacho nut cheese top with 1-2 tbsp walnut taco meat, 2-3 roma tomato half slices, 3-4 thin avocado slices, 1 tsp chopped green onions and 2-3 sprigs of cilantro. Wrap the lettuce leaf around the filling and enjoy.

Walnut Taco Meat

Ingredients

2 cups soaked and dehydrated walnuts*
1 Tbsp. chopped onion
3 Tbsp. chili powder
1 tsp. cumin
1/2 tsp. oregano
1/2 tsp. pink himalayan or celtic sea salt pinch of cheyenne
2 Tbsp. olive oil*

Instructions

Measure out the walnuts. I soak and dehydrate mine in advance. They will keep in an airtight container in the pantry for several months. It’s just easier this way.

Put the walnuts in the food processor and process just until it’s a chunky texture (we are going for the texture of large ground beef crumbles here). Don’t over process because walnuts can quickly turn into a paste. Good for raw brownies, not good for walnut taco meat.

Next chop the onion. You don’t really have to measure. 1 Tbsp. is about 1 thin slice of onion, chopped.

Put the onion in the food processor with the walnuts and pulse until incorporated. I didn’t take a picture of that though. Probably should have.

Next take your chili powder, cumin, oregano, and sea salt and add them to the walnut and onion mixture. Process until all the spices are well blended. The mixture will look pretty much like taco meat.

*If you used soaked and NOT dehydrated walnuts, you will done and it will be perfect. If you used soaked and dehydrated walnuts it will be the right color and flavor but the mixture will be very dry and crumbly.

To fix this, add the olive oil. Pulse the food processor until the olive oil is well blended and you will end up a perfectly moist taco meat that is FULL of flavor.

Nacho Nut Cheese

Ingredients

2 cups Macadamia nuts or Cashews (or 1 cup each)
1 red bell pepper, seeded
Juice of 1 Lemon
1/4 cup Nutritional Yeast (optional for more cheesy flavor)
1/4 tsp. Cheyenne Pepper
1/4 tsp. Pink Himalayan Salt or Celtic Sea Salt

Instructions

Blend all ingredients in Vitamix or food processor until smooth.

Assemble all of the layers like you would a traditional taco, starting with the romaine lettuce as the shell, then the nacho cheese, then the walnut taco meat, then the tomatoes and cilantro.
