Chocolate Peanut Butter Parfait

The other day a few of the women in the green smoothie challenge facebook group were talking about needing some chocolate. Then they started talking about and sharing some great raw chocolate pudding recipes.

This really made me want some chocolate (can you blame me?)

So, I headed to the kitchen last night and started making some raw chocolate pudding.

Then I had a craving for peanut butter to go with it, but I didn’t want to mix it into the pudding itself.

I came up with the idea to make a layered parfait.

I almost died and went to parfait heaven after I had just one bite of this! It’s creamy, smooth, rich and oh so hard to believe it’s good for you. After about 3 bites my chocolate craving was satisfied and I could go to bed a very happy woman.

Chocolate Peanut Butter Parfait

Ingredients

For the Chocolate Pudding
For the Peanut Butter Pudding
  • 1/2 cup natural creamy peanut butter
  • 3 tbsp agave nectar
  • 3 tbsp coconut or almond milk

Instructions

Chocolate Pudding
  1. Blend avocado, raw cacao powder, agave nectar, coconut or almond milk and salt together in a food processor until smooth.
  2. Place into a separate bowl. Set aside. Rinse out food processor.
Peanut Butter Pudding
  1. Blend natural creamy peanut butter, agave nectar and coconut or almond milk together in a food processor until smooth.
Presentation
  1. In a clear glass or cup, alternate layers of chocolate pudding and peanut butter pudding until it’s all used. This can also be made into 2 servings (just layer into 2 different glasses)
  2. Enjoy!
